Serves 4
2 onions, chopped
2 carrots, grated
4 cloves of garlic, finely chopped
100g mushrooms, finely chopped
1 stick of celery, finely diced
400g lean lamb mince
400g canned tomatoes, finely chopped
100ml water
1 tbsp. olive oil
2 tbsp. tomato puree
½ tsp. paprika
Season with salt and pepper
400g of cooked brown long grain rice
(100g cooked rice per serving)
Preparation Method
Sauté the onions, garlic, carrot, mushrooms and celery in the olive oil
over a medium heat until softened.
Add the lamb and cook for 5 to10 minutes until browned.
Stir through the tomatoes and tomato puree cook for about 3 minutes.
Add the paprika and water.
Cover the pan and cook over a low heat for around 30 minutes until the
sauce is thick and rich.
Season to taste and set the pan aside until ready to serve.
Serve immediately with the cooked brown rice.
