Serves 4

100g quinoa
100ml water
300ml fresh almond milk
½ tsp. vanilla essence
Splash of lemon juice
½ tbsp. coconut oil
1 tbsp. honey
¼ tsp. cinnamon (optional)
2 tbsp. omega seeds

Method

put the quinoa, milk, water and vanilla essence in a pan and bring to the boil. Simmer for 15 minutes. 2 minutes before you take the quinoa out the pan add in the coconut oil, honey, lemon juice and cinnamon if you are using it.

split mixture between four bowls  and top with omega seeds.
