Serves 4
400g asparagus, woody stems removed
220g cooked king prawns
80ml extra virgin olive oil
1 garlic clove, finely chopped
1 tbsp. fresh parsley, finely chopped
Juice of 1 lemon
Salt and black pepper to taste
Method
Boil some water in a medium sized pan.
Boil the asparagus for 3 minutes and drain off excess water.
Put the prawns in the boiling water for 30 seconds.
Place the prawns in a large bowl.
Slice the asparagus spears and place in the bowl with the prawns.
Add the remaining ingredients and mix together.
