6 sun roasted tomatoes
3 tbsp. olive oil
1 small red onion, thinly sliced
2 tsp. red wine vinegar
5g ground cumin
200g sliced halloumi
85g quinoa

Method

Cook the quinoa according to the instructions on the packet, drain well 
and place into a bowl.
Add the cumin, red onion red wine vinegar, sun roasted tomatoes and 
olive oil.
In a griddle pan cook the halloumi until it is soft.
Place the halloumi on top of the quinoa on a plate and serve immediately

Other info: 

The nutritional values in this recipe 
seem a little on the high side 
particularly the calorie content and 
the amount of fat. This is due to the 
addition of the halloumi so although it 
tastes delicious with the other 
ingredients, if you are looking to lose 
weight, you might want to leave it 
out!
